Chicken Pesto Pasta

Directions

  1. 1Grab three chicken breasts, slice them thin, and cut them into small cubes.
  2. 2Season the chicken with rotisserie chicken seasoning and garlic and herb seasoning.
  3. 3Add a couple of tablespoons of cornstarch to the seasoned chicken and mix.
  4. 4Add a little bit of oil and about three tablespoons of butter to a skillet and heat.
  5. 5Add the chicken to the hot skillet and cook for about six minutes total, flipping after three minutes, until golden.
  6. 6Remove the cooked chicken and set it aside in a separate bowl.
  7. 7Add a few tablespoons of butter to the skillet and once melted, add a diced onion.
  8. 8Once the onions are translucent, add about 16 ounces of mushrooms.
  9. 9Add a few tablespoons of minced garlic and some more seasoning towards the end of cooking the mushrooms.
  10. 10Add 1 pound of pasta and one carton of chicken broth to the skillet with the mushrooms.
  11. 11Bring to a boil and cook for about eight minutes until the noodles are cooked through and the liquid is absorbed.
  12. 12Turn the heat to low and add a half of a cup of heavy cream and a half of a cup of shredded parmesan cheese.
  13. 13Mix until everything is melted.
  14. 14Add three heaping tablespoons of pesto (if desired).
  15. 15Add the cooked chicken back into the skillet and mix.

  • 1 onion, diced
  • 16 ounces mushrooms
  • 3 tbsp minced garlic
  • 1 pound pasta
  • 1 carton chicken broth
  • 0.5 cup heavy cream
  • 0.5 cup shredded parmesan cheese
  • 3 tbsp pesto

Tips

  • Cook chicken until golden, about 3 minutes per side.
  • Add more butter if mushrooms get dry while cooking.
  • Pesto is optional, add more if you like it a lot.
