Directions

  1. 1In a blender, add self-raising flour, whole milk, large eggs, sugar, vanilla, cinnamon powder, a pinch of salt, and melted butter.
  2. 2Blend together and let the batter sit for 20 minutes so the flour can absorb the liquid.
  3. 3Meanwhile, preheat the oven to 180 degrees Celsius and place your skillet for about 10 minutes in the oven.
  4. 4Transfer the hot skillet onto a high-heat stove using oven mittens.
  5. 5Add a tablespoon of butter to the hot skillet.
  6. 6Pour the batter into the skillet.
  7. 7For the cinnamon swirl, mix melted butter, cinnamon powder, and brown sugar in a small bowl.
  8. 8Swirl the cinnamon mixture into the batter.
  9. 9For the crumble, combine flour, softened butter, caster sugar, and optional vanilla.
  10. 10Crumble with fingers until it has a crumble-like texture (add more flour if needed).
  11. 11Top the batter with the crumble.
  12. 12Pop in the oven for 15-20 minutes at 180 degrees Celsius.
  13. 13Watch it rise and turn golden.
  14. 14Once removed from the oven, it will deflate while it cools down.
  15. 15Lightly dust with icing sugar.
  16. 16Add icing glaze (double cream and icing sugar) or just double cream.
