1Wash and dry five chicken thighs, then cube them up.
2In a bowl, add the chicken pieces, avocado oil, and the following spices: smoked paprika, rosemary, cajun seasoning, garlic powder, onion powder, and salt. Mix well.
3Add the chicken to a hot pan and cook for 15 minutes until the internal temperature reaches 165°F.
4In the same pan, add two cups of chopped peppers and onions and one tablespoon of tomato paste. Mix well.
5Add 1.5 cups of half & half and the following spices: cajun seasoning, onion powder, garlic powder, smoked paprika, and salt. Mix until well combined.
6Stir in half a cup of parmesan cheese to thicken the sauce.
7Add the cooked chicken and three cups of baby spinach to the sauce and let it cook down.
8Boil water in a pot and cook one pound of Mafaldine pasta according to package directions.
