1Place gelatin and ½ cup of water in a small bowl, give it a light stir and then allow to sit for 10 minutes to bloom.
2Meanwhile, gently warm together agave syrup and ¾ cup of water in a saucepan on low heat.
3Once the gelatin has bloomed, add it to the syrup mix and stir through until dissolved.
4Tip the mixture into a stand mixer or the bowl of an electric mixer and whip on high for ten minutes — until the mix becomes frothy, light, and at least four times its volume.
5Add the vanilla and rose water and whip lightly again.
6Scoop the fluff into a baking pan lined with greaseproof paper and place in the fridge to set for 1 hour.
7Serve cut into squares and scattered with rose petals.
