Homemade Gyros

Directions

  1. 1Add ground beef and ground lamb to a bowl.
  2. 2Season with salt, pepper, smoked paprika, cumin, ground coriander, garlic and onion powder, dried oregano, and cayenne.
  3. 3Drizzle in olive oil and add a scoop of Greek yogurt.
  4. 4Grate a small onion, squeeze out the water, and add it to the bowl.
  5. 5Mix well until the meat forms what looks to be a paste.
  6. 6Place a good portion between two sheets of parchment paper and roll it out thin.
  7. 7Remove the top sheet of parchment paper, then fold the meat over all the way up.
  8. 8Place it on a baking sheet and bake in a 400° oven for 15 minutes.
  9. 9After about 15 minutes, unwrap the logs and place them back in the oven to brown for another 15 minutes.
  10. 10Let the meat rest for about 5 minutes, then tear it into strips.
  11. 11To assemble, lay down a warm pita and spread a layer of homemade tzatziki sauce.
  12. 12Add thinly sliced onions, then the gyro meat.
  13. 13Top it with tomatoes, more sauce, and onions.

Tips

  • Mix the meat until it forms a paste-like consistency.
