Chicken Tikka Masala

Directions

  1. 1Cube chicken thighs for the marinade.
  2. 2Add yogurt to the chicken.
  3. 3Add ginger and garlic paste to the chicken.
  4. 4Drizzle a tiny bit of oil into the chicken mixture.
  5. 5Add Kashmiri red chili powder to the chicken.
  6. 6Add cumin to the chicken.
  7. 7Add cardamom to the chicken.
  8. 8Add a healthy amount of garam masala to the chicken.
  9. 9Finish with a healthy amount of salt.
  10. 10Mix the marinade with your hands until well combined.
  11. 11Spread the marinated chicken out on a sheet tray.
  12. 12Throw the chicken into the oven set at 400°F.
  13. 13In a deep pot, start melting down some ghee.
  14. 14Sauté down lots of onions.
  15. 15Add fresh mashed ginger and garlic to the pot.
  16. 16Add a little mustard oil to the pot.
  17. 17Add the same spices as before to the pot.
  18. 18Add fire-roasted tomatoes to the pot.
  19. 19Give the mixture a nice pinch of salt.
  20. 20Add a pinch of sugar.
  21. 21Blend the sauce until smooth using an immersion blender.
  22. 22Splosh in some heavy cream when the sauce is creamy and dreamy.
  23. 23Drop in the cooked chicken.
  24. 24Mix the chicken and sauce, drop the heat to a low, and let it marry for 10 minutes.

  • 1 teaspoon Cumin
  • 1 teaspoon Cardamom
  • 1 tablespoon Salt
  • 2 tablespoons Ghee
  • 1 Large onion
  • 1 tablespoon Mustard oil
  • 3 cans Fire roasted tomatoes
  • 1 teaspoon Sugar
  • 0.5 cup Heavy cream
  • Cilantro
  • Rice
  • Naan

Tips

  • Chicken Tikka Masala is more tomato-y, while Butter Chicken is more creamy, but both are delicious.
