Directions

  1. 1Remove the membrane from the back of the babyback ribs.
  2. 2Coat both sides of the ribs with yellow mustard as a binder.
  3. 3Season both sides of the ribs generously with Heath Riles BBQ Honey Rub and then Heath Riles BBQ Beef Rub.
  4. 4Place the seasoned ribs onto the Rec Teq smoker set at 275°F for 2 hours.
  5. 5While the ribs are smoking, prepare the butter bath for the wrap by combining a stick of butter, some Hot Honey Peach glaze from Heath Riles, and more of both the Honey Rub and Beef Rub in a saucepan over heat.
  6. 6Stir the butter bath mixture until well combined.
  7. 7After 2 hours, remove the ribs from the smoker.
  8. 8Place the ribs on a double layer of foil, pour some of the butter bath over them, and wrap them up tightly.
  9. 9Repeat the wrapping process for the second rack of ribs.
  10. 10Return the wrapped ribs to the 275°F smoker, meat-side down, for an additional hour.
  11. 11After one hour, flip the ribs over into foil boats (meat-side up).
  12. 12Brush a little extra of the glaze on top of the ribs and let it tack up for about 10-15 minutes.
  13. 13Remove the ribs from the smoker and slice them before serving.

Tips

  • Use mustard as a binder for the seasoning, but skip it if you don't like it.
  • Go real heavy with the rub on both sides of the ribs.
  • Wrap the ribs in a double layer of foil to keep them tight and juicy.
  • After wrapping, place the ribs meat-side down for one hour.
  • Flip the ribs into a foil boat, glaze again, and finish uncovered for 10-15 minutes.
