24 Hour Dough Pizza

tiktok.com
Serves 3

Directions

  1. 1Add bread flour, all purpose flour, yeast, salt and sugar to a bowl
  2. 2Mix it up
  3. 3Add your cold water and olive oil
  4. 4Start mixing with your hands or a spatula
  5. 5Keep mixing until all the water is incorporated into the flour
  6. 6Pour onto the countertop and start working it
  7. 7Knead the dough for 5 to 7 minutes
  8. 8If it's too sticky, let it rest for 15 minutes
  9. 9Lightly oil your container
  10. 10Throw the dough in there and let it sit covered for 30 minutes
  11. 11After 30 minutes it should increase in volume and we're gonna perform some stretch and folds
  12. 12Fold it over itself four times in every direction
  13. 13Put the lid back on rest for 30 minutes and then we're gonna repeat that process at least one more time
  14. 14You can repeat this process a few more times but it's usually good the second time
  15. 15We know it's ready when it passes the window pane test like this after 30 minutes
  16. 16Leave it on the countertop overnight for about 20 hours or so
  17. 17Then I recommend balling it at least three hours before you wanna make pizza

  • 12.5 g salt
