Directions

  1. 1Finely dice the carrots.
  2. 2Finely dice the celery.
  3. 3Finely dice the onions.
  4. 4Finely chop the garlic.
  5. 5Add extra virgin olive oil to a stockpot.
  6. 6Add the mince to the hot oil and leave it alone to sear off on a high heat until it develops a beautiful crust.
  7. 7Break up the mince and stir it.
  8. 8Add tomato paste, salt, bay leaves, and garlic to the mince.
  9. 9Sauté on a medium-high heat for about 5 minutes.
  10. 10Add the diced celery, carrots, and onions to the pot.
  11. 11Add dried Italian herbs and chili flakes.
  12. 12Close the lid and turn the heat down to a medium flame, cooking for 15-20 minutes until the vegetables are soft and translucent.

  • 100 g butter
  • 4 tbsp plain flour
  • 4 cups whole milk
  • 1 pinch nutmeg
