Directions

  1. 1Mix salt, garlic, sweet paprika, and hot paprika into a paste, adjusting garlic and spice to taste.
  2. 2Slice the pork into portions and rub with vinegar first then with the spice paste.
  3. 3Arrange the meat in a baking dish and cover with grape leaves, foil, or parchment.
  4. 4Roast at 150 °C (300 °F) for about 4 hours until tender.
  5. 5Uncover and brown the top.

  • 1–1.5 kg fatty pork, sliced into portions
  • to taste sea salt
  • garlic, minced
  • 3/4 cup sweet paprika
  • 1/4 cup hot paprika or chili powder
  • white wine vinegar
  • grape leaves (optional)
  • parchment or aluminum foil (optional)

Tips

  • Use fresh minced garlic or garlic powder.
  • Grape leaves are the traditional covering, but you can use parchment or aluminum foil.
  • Serve hot over polenta, stuffed in sandwiches, or sliced cold in a salad.
