Serves 1

Directions

  1. 1Measure 1 cup of all-purpose flour and add it to a container.
  2. 2Add 1 cup of brown sugar to the container.
  3. 3Add 1 cup of white sugar to the container.
  4. 4Add 2/3 cup of cocoa powder to the container.
  5. 5Add 1/2 teaspoon each of salt and baking powder to the container.
  6. 6Add one packet (approximately 2 teaspoons) of instant espresso powder to the mix.
  7. 7Mix all the dry ingredients well.
  8. 8To make a single brownie, combine 1/4 cup of the mix, 2 tablespoons of melted butter, 1 tablespoon of milk, and a splash of vanilla in a mug.
  9. 9Microwave the single brownie mix for about one minute in a coffee cup, adjusting time based on your microwave's power.
  10. 10To make a pan of brownies, use 2 cups of the dry mix, 1/2 cup (or one stick) of melted butter, two large eggs, and some vanilla.
  11. 11Bake the pan of brownies at 350°F for 20 to 25 minutes in an 8x8 square pan.
  12. 12For fudgier brownies, bake closer to 20 minutes; for crispier edges, bake closer to 25 minutes.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1 cup white sugar
  • 0.66 cup cocoa powder
  • 0.5 tsp salt
  • 0.5 tsp baking powder
  • 2 tsp espresso powder (Cafe Bustelo instant espresso packet)

Equipment

jarmugmicrowave8x8 pancoffee cup

Tips

  • Using brown sugar adds a dark molasses fudgy flavor to the brownies.
  • Espresso powder enhances the rich chocolate flavor, even if you don't drink coffee.
  • Making your own mix allows you to control the amount of sugar and coffee.
  • For a single brownie, watch your microwave as power levels can vary.
