Peel the potato.

Chop the potato into smaller pieces.

Steam the chopped potato until soft.

Mash the steamed potatoes in a bowl.

Add salt to the mashed potatoes.

Add arrowroot powder to the mashed potatoes.

Mix and knead the mixture until it forms a dough.

Shape the potato dough into small, rectangular pieces.

Heat oil in a frying pan.

Place the potato mochi pieces into the hot oil.

Fry the potato mochi until golden brown on both sides.

In a saucepan, combine mirin, soy sauce, brown sugar, arrowroot powder, and water.

Whisk the sauce mixture and cook until it thickens.

Place the fried potato mochi on a plate.

Skewer the potato mochi.

Brush the sweet soy sauce glaze onto the potato mochi.

Place a small piece of nori on top of each glazed mochi.
