Take out your steak and pat it dry with paper towels.

Let the steak sit out for a minute.

Dice up your potatoes into small cubes.

Put the diced potatoes into a bowl.

Add olive oil to the potatoes.

Season the potatoes with sea salt, black pepper, smoked paprika, onion powder, garlic powder, and Italian blend seasoning.

Toss the potatoes to coat them evenly with the seasoning.

Heat a cast iron skillet until it's very hot (damn near smoking).

Salt your steak on both sides and pat it with your hands.

Add one spoonful of beef tallow to the hot skillet.

Lay the steak down in the skillet and press it down with your fist.

Cook the steak for 2 to 3 minutes on one side and then flip it.

Add butter and crank down the heat.

Baste the steak with the melted butter on both sides for about a minute.

Take out your steak and let it sit, placing a spoon under it to prevent sogginess.

Drop the seasoned potatoes into the skillet once it's a little cooler.

Let the potatoes cook all the way through.

Crank the heat back up and put a lid on to cook the potatoes faster.

Once the potatoes are pretty much done, make a circle in the middle.

Crack in all of your eggs into the center of the potatoes.

Season the eggs with salt and pepper if desired.

Let the eggs cook how you want, allowing the potatoes to get crispy on the outside.

Slice the rested steak into thin slices.

Arrange the sliced steak on top of the cooked eggs and potatoes.

Garnish with parsley if you'd like.

Tips
Make sure the steak is over an inch thick.
Pat the steak dry with paper towels and let it sit out for a minute.
Wait until your cast iron skillet is damn near smoking before adding the beef tallow.
Put a spoon under the steak while it rests so it doesn get soggy.
Cook the eggs how you want, the potatoes will get crispy on the outside.
Cook everything how you would like to cook it.
