Steak and Egg Skillet

Directions

  1. 1Take out your steak and pat it dry with paper towels.
  2. 2Let the steak sit out for a minute.
  3. 3Dice up your potatoes into small cubes.
  4. 4Put the diced potatoes into a bowl.
  5. 5Add olive oil to the potatoes.
  6. 6Season the potatoes with sea salt, black pepper, smoked paprika, onion powder, garlic powder, and Italian blend seasoning.
  7. 7Toss the potatoes to coat them evenly with the seasoning.
  8. 8Heat a cast iron skillet until it's very hot (damn near smoking).
  9. 9Salt your steak on both sides and pat it with your hands.
  10. 10Add one spoonful of beef tallow to the hot skillet.
  11. 11Lay the steak down in the skillet and press it down with your fist.
  12. 12Cook the steak for 2 to 3 minutes on one side and then flip it.
  13. 13Add butter and crank down the heat.
  14. 14Baste the steak with the melted butter on both sides for about a minute.
  15. 15Take out your steak and let it sit, placing a spoon under it to prevent sogginess.
  16. 16Drop the seasoned potatoes into the skillet once it's a little cooler.
  17. 17Let the potatoes cook all the way through.
  18. 18Crank the heat back up and put a lid on to cook the potatoes faster.
  19. 19Once the potatoes are pretty much done, make a circle in the middle.
  20. 20Crack in all of your eggs into the center of the potatoes.
  21. 21Season the eggs with salt and pepper if desired.
  22. 22Let the eggs cook how you want, allowing the potatoes to get crispy on the outside.
  23. 23Slice the rested steak into thin slices.
  24. 24Arrange the sliced steak on top of the cooked eggs and potatoes.
  25. 25Garnish with parsley if you'd like.

Tips

  • Make sure the steak is over an inch thick.
  • Pat the steak dry with paper towels and let it sit out for a minute.
  • Wait until your cast iron skillet is damn near smoking before adding the beef tallow.

  • Cook the eggs how you want, the potatoes will get crispy on the outside.
