Place a pot on medium-low heat.

Add one cup of coconut sugar to the pot.

Cook and stir the sugar until it becomes sticky.

Once sticky, add half a cup of water.

Turn up the heat slightly to bring the mixture to a simmer.

Add 3 small cinnamon sticks (or one large one).

Add some lemon skin.

Add some lime skin.

Add some orange skin.

Add a dash of coriander.

Add a little bit of nutmeg.

Let the mixture simmer for 5 to 10 minutes until it thickens.

After 10 minutes, take the pot off the heat.

Strain the syrup into a glass jar.

Add one teaspoon of vanilla to the syrup.

Add half a teaspoon of bitters (without red dye).

Let the syrup cool for about 30 minutes.

Fill a cup with ice.

Pour one part of the cooled syrup into the ice-filled cup.

Add three parts sparkling water to the cup.

Stir the mixture thoroughly.

Tips
Let the syrup simmer for 5 to 10 minutes to thicken and allow flavors to meld.
Let the syrup cool for about 30 minutes before mixing.
Use sparkling water made with real lemon juice.
Ensure bitters do not have red dyes.
Use one part syrup to three parts sparkling water.
