Serves 1

Directions

  1. 1Make your cake batter by adding your butter and sugar to a bowl and whisking until the butter turns pale and fluffy.
  2. 2Add your eggs, milk and vanilla extract and whisk through.
  3. 3Go in with your flour and fold through until there’s no more white flour bits.
  4. 4For the banoffee, in a pan over a medium heat, add your butter and melt until foamy.
  5. 5Add in your light brown sugar and mix through until combined. Add a splash of boiling water and whisk vigorously if it splits.
  6. 6Turn the heat to low and add your bananas carefully cut side down.
  7. 7Turn the heat off and gently spoon your cake batter over the top being careful not to mix it with the caramel.
  8. 8Get it in the oven for 35 minutes at 170oC.
  9. 9Flip out onto a plate and serve up with a big dollop of ice cream.
