Serves 1

Directions

  1. 1Season the ground chicken and mix it up.
  2. 2Form a giant meatball.
  3. 3Lay out two pieces of parchment paper and put some flour on one piece to create a nonstick surface.
  4. 4Place the meatball in the flour and press it down.
  5. 5Oil your hands to prevent sticking to the chicken.
  6. 6Get rid of excess flour by pushing it onto a sheet pan.
  7. 7Brush a thin layer of egg wash onto the surface of the chicken.
  8. 8Push any excess egg wash onto a plate or sheet pan before flipping.
  9. 9Spread breadcrumbs right on top of the chicken.
  10. 10Press the breadcrumbs in so they stick and get rid of any excess.
  11. 11Spray generously with avocado oil until the breadcrumbs feel hydrated.
  12. 12Flip the chicken cutlet.
  13. 13Center the cutlet and put another sheet of parchment paper on top.
  14. 14Lightly fold the top and bottom parchment paper, then pinch one side to keep it closed.
  15. 15Slide your other hand underneath and flip with full confidence.
  16. 16Repeat the process of adding egg wash and breadcrumbs on the other side, getting rid of any excess.
  17. 17Lightly oil your sheet pan.
  18. 18Lift up the parchment paper, guiding one hand underneath, and transfer the cutlet to the oiled sheet pan.
  19. 19Bake at 450 degrees Fahrenheit for about 15 minutes.
  20. 20Broil to finish.
