Apply mustard to the pork tenderloins as a binder.
Mix together brown sugar, garlic powder, onion powder, paprika, chili powder, salt, and pepper in a bowl to create a seasoning blend. Season the pork tenderloins well with this mixture.
Arrange strips of bacon on a surface and wrap the pork tenderloins tightly, securing with toothpicks.
Apply additional seasoning to the outside of the wrapped pork.
To stuff a tenderloin, cut a slice along the length of the pork to create a cavity. Combine minced jalapeños, cream cheese, and shredded cheddar cheese, then stuff the mixture into the pork cavity.
Place the pork on a grill preheated to 300 F and smoke for 30 minutes.
In a pan, melt the butter, then add the bourbon and honey to create the glaze.
Brush the glaze over the pork on the grill and cook for another 30 minutes, or until the internal temperature reaches 145 F.
