Nectarine Bruschetta with Ricotta and Honey

Directions

  1. 1Take your nectarines and cut them into quarters.
  2. 2Put the nectarine quarters on a plate, add a pinch of salt, olive oil, and thyme.
  3. 3Place the seasoned nectarines straight on the barbecue on a really high temperature.
  4. 4Cut two nice and thick slices of sourdough bread.
  5. 5Place the sourdough bread slices straight onto the barbecue as well.
  6. 6Cook the nectarines just enough to char them on both sides, ensuring they still hold their shape.
  7. 7Add a touch of olive oil on the bread while it's on the barbecue.
  8. 8Cut each grilled nectarine again in half.
  9. 9Add beautiful fresh ricotta at the base of the toasted bread.
  10. 10Spread the ricotta evenly on top of the bread.
  11. 11Next, place the grilled nectarines on top of the ricotta.
  12. 12To finish, drizzle with golden honey.

Tips

  • Don't cook the nectarines for too long; you want them to still hold their shape, so cook them just enough to char them on both sides.
