Preheat the oven to 340°F (170°C). Lightly grease an 18–20 cm / 7–8 inch round baking pan.
In a large bowl, mix the softened butter and brown sugar until well combined.
Add the egg and mix until smooth.
Add the flour and baking powder. Mix, then gently knead until a soft, smooth cookie dough forms.
Fold in the chocolate chips until evenly distributed throughout the dough.
Divide the cookie dough into two portions.
Press the first portion evenly into the bottom of the prepared pan, bringing a little dough up around the edges.
Spread 4 tablespoons of chocolate cream over the center, leaving a small border around the edge.
Flatten the remaining cookie dough and carefully place it over the chocolate filling. Press the edges together to seal the chocolate inside.
Sprinkle extra chocolate chips generously over the top.
Bake for 30–40 minutes, or until the edges are golden and the center is baked but still soft.
Let the Chocolate Stuffed Cookie Pie cool slightly before slicing. Serve while still a little warm so the chocolate center stays thick, melty, and gooey.
