Ube Cookies

Directions
- 1In a bowl, add the flour, baking soda, and kosher salt. Whisk to combine.
- 2In another bowl, add the butter and sugar. Mix with an electric hand mixer until combined.
- 3Add the egg to the butter and sugar mixture and mix again with the hand mixer.
- 4Add the ube jam and ube extract to the wet ingredients and whisk until incorporated.
- 5Fold in the flour mixture using a silicone spatula.
- 6Chop the white chocolate chips with a knife and add them to the cookie dough, then stir to combine.
- 7Use a cookie scoop to portion the dough onto a lined baking sheet.
- 8Top each cookie with additional white chocolate chunks.
- 9Bake the cookies in an oven.
