Marinated Flank Steak

Directions

  1. 1Combine chopped onion, rosemary, garlic, balsamic vinegar, soy sauce, Dijon mustard, salt, pepper, and olive oil in a bowl and whisk to create the marinade.
  2. 2Prick the flank steak with a fork to help it absorb the marinade better and tenderize it slightly.
  3. 3Place the pricked flank steak into a zip-top bag and pour the marinade over it, ensuring all the air is out of the bag.
  4. 4Marinate the steak for at least one day, preferably two, in the refrigerator.
  5. 5Preheat your grill to a screaming hot temperature, then lightly oil the grill grates with olive oil.
  6. 6Place the marinated flank steak on the hot grill and cook for 6 to 8 minutes per side, brushing with extra marinade if desired, until good caramelization is achieved.
  7. 7Once cooked, remove the steak from the grill and let it rest for at least 10 minutes before slicing.
  8. 8Slice the flank steak thinly against the grain.
  9. 9Drizzle any accumulated juices from the cutting board over the sliced steak before serving.
