Loaded Mexican Halloumi Roasties

Directions

  1. 1Peel and cut the potatoes into medium pieces.
  2. 2Place the potatoes in a large saucepan and cover them in cold, salted water.
  3. 3Bring them to the boil and simmer until tender, but still firm enough that you can shake them up without them breaking.
  4. 4Drain the potatoes and give them a really good shake in the colander to fluff up the edges, then leave the potatoes to steam dry for 15 minutes.
  5. 5Cut up the peppers, onion and halloumi.
  6. 6Heat the oven to 200C (fan).
  7. 7Drizzle vegetable oil in a roasting tin and place in the oven for 3 minutes.
  8. 8Add fajita spice mix into the roasting tin and stir until the spice has mixed with the oil.
  9. 9Tip the potatoes into the pan, turn them over until coated, season with salt and place them in the oven for around 40 minutes turning once.
  10. 10Place the peppers and onion on a separate baking tray.
  11. 11Mix oil with fajita mix and use a pastry brush to paint the spicy oil all over the halloumi strips until coated.
  12. 12Drizzle the rest of the oil over the veg and use your hands to ensure that it's coated and place the halloumi strips in between the veg.
  13. 13When the potatoes have been in the oven for 40 minutes, give them a turn before returning to the oven with the halloumi and veg tray for a final 20 minutes.
  14. 14Mix the tomato puree, honey and water together.
  15. 15When everything is cooked, tip the puree over the halloumi and veg, season with salt and pepper and use a fish slice to turn the mixture over until everything is coated in tomato sauce.
  16. 16Tip the roast potatoes onto a serving plate and top with the Mexican halloumi mix.
  17. 17Finish with some soured cream, coriander and a little lime.
