High Protein Loaded Breakfast Burritos

Directions

  1. 1In a bowl, add diced potatoes, a bit of olive oil, and the seasonings (salt, Italian Herbs Seasoning, onion powder, garlic powder, chilli powder, smoked paprika).
  2. 2Mix the potatoes together and air fry or oven bake them according to the on-screen settings.
  3. 3While the potatoes are baking, cook up some diced onions.
  4. 4Once the onions have some color, add extra lean beef mince.
  5. 5Add Worcestershire sauce and the same seasonings used for the potatoes to the beef mince.
  6. 6Once the mince is nearly cooked, add tomato paste and diced garlic.
  7. 7Mix and let the mince fully cook through.
  8. 8In a bowl, add eggs and blended cottage cheese (for extra protein).
  9. 9Mix the egg and cottage cheese mixture together.
  10. 10Cook the egg mixture on low to medium heat, mixing gently every minute or so until super fluffy.
  11. 11Season the cooked eggs after.
  12. 12Grab a warmed tortilla.
  13. 13Evenly distribute the egg, mince, and potatoes on the tortilla.
  14. 14Top it off with some Sriracha mayo and chives.
  15. 15Roll the burrito.
  16. 16Toast the rolled burrito.
  17. 17Repeat the process for the other nine burritos.

  • 1 KG diced potatoes (Carisma Potatoes)
  • 1 Tsp olive oil
  • 1 Tsp salt
  • 1 Tsp Italian Herbs Seasoning
  • 1 Tsp onion powder
  • 1 Tsp garlic powder
  • 1 Tsp chilli powder
  • 1.5 Tsp smoked paprika
  • 1 diced onion
  • 1.5 KG extra lean beef mince
  • 100 ml Worcestershire sauce
  • seasonings (same as used for potatoes)
  • 80 g tomato paste (Leggo’s Garlic & Herb Tomato Paste)
  • 4 diced garlic cloves
  • 15 eggs
  • 300 g egg whites (optional)
  • 100 g blended cottage cheese (optional)
  • 10 large tortillas (Simsons Pantry Large Low Carb Protein Wraps)
  • 25 g Sriracha Mayonnaise (Flying Goose Sriracha Mayonnaise or mix 250g of light mayonnaise with 10g of sriracha)

Tips

  • To prevent tortillas from breaking when rolling, heat them on a pan on low heat for 30 seconds on each side.
  • When cooking eggs, cook on low to medium heat, mixing gently every minute or so, to make them fluffy.
  • To reheat frozen burritos: remove from wrapper/foil, wrap in a slightly damp paper towel, microwave for around 2 minutes to thaw, then air fry at 190C (375F) for approximately 5-8 minutes (or use oven/pan).
