Boil the potatoes in boiling water for about an hour, then drain, peel, and mash them while still hot in a bowl.

Add chopped parsley, grated garlic, salt, pepper, eggs, bread crumbs, and grated caciocavallo to the bowl.

Mix well until a compact dough is formed, cover with plastic wrap, and let it rest in the refrigerator for at least one hour.

Form the mixture into several patties and press them down slightly. Use oil on your hands to help with shaping if needed.

Heat plenty of seed oil in a pan, carefully add the patties, and fry until golden brown, turning occasionally. Drain on paper towels and serve hot.
