1In a bowl, combine one egg, one and a quarter cup of milk, a quarter cup of vegetable oil, one and a half cups of all-purpose flour, two teaspoons of baking powder, and one tablespoon of white sugar to create the pancake batter. Mix well.
2Once the batter is mixed, set it aside.
3For the cinnamon sugar swirl, combine four tablespoons of softened butter, a quarter cup of white sugar, two teaspoons of cinnamon, and one tablespoon of the pancake batter. Mix this and set it aside.
4For the icing, mix about a cup of powdered sugar with a splash of milk. Set this aside.
5In a skillet over medium heat, melt some butter to cover the bottom.
6Once the butter starts bubbling and frothing, add your pancake mix to the skillet.
7When you start seeing bubbles in the pancake mix, take your cinnamon sugar mix (preferably in a piping bag) and create a swirl on top of the pancake.
8Place a lid over the skillet and let the pancakes cook for four or five minutes without flipping.
9Optionally, open the lid and dump some more cinnamon sugar on top.
10Once done, remove the pancakes from the skillet and place them on a plate.
11Drizzle a generous amount of the prepared icing on top of the pancakes.

Tips
Do not flip the pancakes, let them cook for four or five minutes with a lid over top.
You can add more cinnamon sugar on top once cooked.
