Directions

  1. 1Place potatoes in a large saucepan and cover with cold water. Bring to the boil over high heat.
  2. 2Drain potatoes, transfer to a bowl and cool.
  3. 3Use a potato masher to mash potato until smooth. Add salt, baking powder, and butter, then stir to combine.
  4. 4Add flour and cheese, then stir until just combined.
  5. 5Turn out onto a lightly floured surface. Evenly divide dough into 3 balls. Press out each ball to form a 1cm-thick, 12cm round. Cut each round into quarters.
  6. 6Preheat an air fryer to 180°C. Cut a sheet of baking paper large enough to come halfway up the sides of your air fryer basket. Gently place scones on top of the paper, not touching.
  7. 7Gently brush scone tops with melted butter and cook.
  8. 8Carefully turn scones over, brush with remaining melted butter, and cook until golden.
  9. 9Transfer to a plate and cover loosely with a tea towel to keep warm. Repeat with remaining scones.

  • 500 g white potato, peeled, chopped
  • 1/4 tsp sea salt
  • 1/4 tsp baking powder
  • 40 g butter, chopped
  • 100 g plain flour
  • 80 g 24-month aged cheddar, grated
  • 20 g butter, melted
  • plain flour, to dust
