1Preheat oven to 475°F and line a baking sheet with parchment paper.
2Whisk together flour, sugar, baking powder, and salt.
3Grate the cold butter directly into the dry ingredients, then work it together with your fingers until it resembles damp sand.
4Whisk together the milk and eggs, then add most of it to the flour mixture, reserving about a tablespoon for brushing. Stir or work together until the dough just comes together.
5Knead a few times to incorporate loose bits — don't overwork it.
6Pat dough out to about 1 inch thick, cut into rounds with a 2-inch biscuit cutter, and transfer to the baking sheet.
7Brush tops with the reserved egg/milk mixture and sprinkle generously with sugar.
