Serves 6

Directions

  1. 1Add self-raising flour to a bowl.
  2. 2Add butter cubes and rub them into the flour with your hands until the mixture resembles coarse breadcrumbs.
  3. 3Add sugar and stir it in.
  4. 4In a glass or bowl, combine milk, egg, and vanilla, then mix with a fork.
  5. 5Add the majority of the egg-milk mixture to the flour and stir with a knife.
  6. 6Place the dough on a floured surface and pat it into a rectangle.
  7. 7Cut the dough into scones using a knife, dipping the knife in flour to help with cutting.
  8. 8Brush the tops of the scones with the remaining egg-milk mixture, avoiding the edges.
  9. 9Bake at 200 degrees for 12 to 15 minutes until risen and golden.

Ingredients

  • 8 oz self-raising flour
  • 2 oz butter, cut into cubes
  • 1 oz granulated sugar
  • 5 tbsp milk
  • 1 egg
  • 1/2 tsp vanilla

Equipment

bowlknifeglassforkbaking sheetaluminum foil

Tips

  • Do not get the egg-milk mixture around the edges of the scones before baking.
  • Dip your knife in flour to make cutting the scones easier.
  • If using a cutter for circles, gather leftover dough, pull it together, and repeat until all dough is used.
  • Scones are done when they are golden brown and sound hollow when tapped on the bottom.
