Line a loaf pan with parchment paper and set it aside.

Pour the cereal of your choice into a large bowl and set aside.

In a small saucepan, bring the coconut oil, almond butter, maple syrup, and butter over medium heat to a gentle simmer.

Remove from heat and stir in the cinnamon and vanilla.

Pour the melted almond butter mixture on top of the cereal and use a spoon or spatula to mix it all together until the cereal is coated.

Whisk all of the "milk" layer ingredients together in a medium bowl.

To assemble, scoop half of the cereal mixture into the bottom of the loaf pan and spread it into an even layer.

Next, spread the greek yogurt mixture on top of the cereal in an even layer.

Top with the remaining cereal mixture, and spread it so that the greek yogurt is covered, lightly patting it in so that it adheres.

Pop the loaf pan into the freezer and freeze until solid, about 2 hours.

Slice into bars, and store in an airtight container in the freezer for up to 2 weeks.

1 tbsp butter sub: vegan butter

Pinch vanilla
1 c greek yogurt (unflavored, unsweetened)
3 tbsp condensed milk sub: oat milk condensed milk
1 tsp vanilla bean paste sub: vanilla extract

Tips
You can use almost any cereal you love, but a high-quality one that holds its crunch well is recommended.
For a dairy-free version, swap butter for vegan butter and use dairy-free yogurt.
