1Wash your hands thoroughly before handling the ingredients.
2Add 2 pounds of ground meat to a mixing bowl. This can be 85% lean ground beef and meatloaf mix (a combination of ground beef, veal, and pork).
3Add 2 eggs to the meat.
4Add 1 cup of seasoned Italian bread crumbs.
5Add 1/4 cup of grated Pecorino Romano or Parmesan cheese.
6Add 1 1/2 teaspoons of salt.
7Add 1/2 teaspoon of pepper.
8Add 1/4 cup of whole milk.
9Optionally, add 2 teaspoons of finely chopped Italian parsley.
10Mix all ingredients together by hand until they are pretty homogenous, with some small chunks remaining.
11Take about 1.5 to 2 inches of the mixture and roll them into meatballs.

Tips
Use an 80% or 85% lean ground beef to preserve moisture, especially if skipping pork. If skipping the pork, go for the 80% lean.
For the meat, a 3:1 ratio of ground beef to a combination of ground veal and ground pork is recommended, or 3:1 ground beef to veal (pork is optional).
