Add one cup of coconut sugar to a pot over medium-low heat.

Mix the coconut sugar until it starts to caramelize on the bottom.

Immediately add water and stir.

Add the spices (cinnamon sticks, star anise, whole cloves, black peppercorns, cardamom pods), ginger, and citrus peels (lemon peel, lime peel).

Add one cup of pitted cherries.

Give it a mix and let it come to a low boil.

Mash the cherries to extract all the flavors.

Strain the mixture into a bowl.

Add vanilla and almond extract.

Whisk until fully incorporated.

Add your desired amount of syrup into a glass with some ice.

Pour in seltzer water.

Give it a stir.

Tips
If cherries are out of season, buy them frozen.
