1Add 4 chile poblanos and 2 jalapeños to an air fryer and set the timer for 15 minutes.
2Bring water to a boil in a pot and add some salt and two bay leaves.
3Once the water starts to boil, add the pasta.
4Once the chile poblanos are roasted and look like this, take them out of the air fryer and put them into a gallon bag.
5Close the bag and let the chiles and jalapeños sweat to make them easier to peel.
6After a few minutes, take them out of the bag and peel them, removing the seeds.
7To the blender, add a piece of onion, the 2 jalapeños, 3 garlic cloves, 3 spoons of sour cream, half a block of cream cheese, cilantro, a splash of milk, and the 4 poblano peppers.
8Add one and a half spoons of chicken bouillon, black pepper, and a little bit of salt to the blender.
9Blend all the ingredients until smooth.
10Drain the cooked spaghetti noodles using a colander.
11Add some butter to a pan and then add the blended sauce.
12Let the sauce simmer on low heat and save some pasta water.
13Add a little bit of the saved pasta water to the sauce.
14Taste the sauce to check for seasoning.
15Add the noodles into the sauce and mix well.
16Add some shredded cheese into the pasta and mix it.
17Prepare a breading station with five eggs, bread crumbs, garlic powder, and black pepper.
18Dip the chicken in the egg, then in the bread crumbs, and then fry until golden brown on both sides.
19Plate the pasta, add the fried chicken on top, and garnish with queso fresco and a little bit of cilantro.

Tips
If you don't have an air fryer, you can use your stove for the chiles and jalapeños.
After roasting the chiles and jalapeños, place them in a bag to sweat, which makes them easier to peel.
Taste your sauce to check if you need any more seasoning.
