Directions
- 1In a bowl, mix flour, sugar and cinnamon.
- 2Add cold cubed butter to the dry ingredients and mix until it resembles coarse crumbs.
- 3Cream together softened butter and sugars until smooth.
- 4Add egg and vanilla, mix well.
- 5Add dry ingredients to the wet ingredients and mix until just combined.
- 6Gently fold in diced strawberries and white chocolate chips.
- 7Scoop the dough onto a baking sheet lined with parchment paper.
- 8Sprinkle streusel topping over the cookies.
- 9Bake at 350°F (175°C) for about 18 minutes, until golden brown.
- 10Let cool on baking sheet for a few minutes before transferring to wire rack.
