Crispy Shaved Tofu Salad

Directions

  1. 1Shave 1 block of extra firm tofu.
  2. 2Mix the shaved tofu with 1/4 cup of cornstarch, 1 tsp each of salt, onion powder, garlic powder, paprika, and a pinch of cayenne.
  3. 3In a separate bowl, mix 2 cups of cooked, rinsed, and dried rice with a generous drizzle of oil, salt, onion powder, garlic powder, and paprika.
  4. 4On a greased pan (or two pans), spread out the rice and tofu in a thin even layer.
  5. 5Bake at 450F for 25-30 minutes until crispy.
  6. 6While the rice and tofu cook, shred one whole English cucumber, a medium red onion, and one large carrot.
  7. 7Press and drain out the liquid from the shredded vegetables.
  8. 8Mix together about 1/4 cup light mayo, and 2-3 Tbsp each of hot sauce and maple syrup.
  9. 9Add salt and pepper to taste to the dressing.
  10. 10Once cooked and cooled for a couple of minutes, toss together the sauce, veggie shreds, crispy rice, and tofu.
  11. 11Garnish with lots of toasted sesame seeds and crispy onions if you choose.

Tips
