Better than Starbucks Baked Apple Croissants

Directions

  1. 1Heat large saucepan on medium high heat and melt 2 tablespoons of butter. Add the diced apples and cook until apples are tender but not overcooked.
  2. 2Add the 1/4 cup of brown sugar, cinnamon, nutmeg, and salt into the apples and stir until evenly combined.
  3. 3In a small bowl, mix together the 1 tablespoon flour, 1 tablespoon water, and 2 teaspoons lemon juice until smooth.
  4. 4Add flour mixture to the apples and cook until the juices thicken to a gravy-like consistency.
  5. 5Remove from heat and set aside to cool.
  6. 6Preheat oven to 375°F (190°C).
  7. 7Cut the puff pastry into 9 squares.
  8. 8Gently stretch the pastry squares slightly from the middle out.
  9. 9Place the puff pastry square into muffin tins.
  10. 10Add a couple tablespoons of apple filling to each square.
  11. 11Fold the corners of the puff pastry over the filling and pinch together.
  12. 12Brush the tops of the pastry with melted butter.
  13. 13Bake at 375°F (190°C) until the pastry is golden brown and crispy.

  • 2 tbsp butter, melted
  • 2 tbsp butter
  • 2 whole apple, peeled and diced into small 1/4 inch pieces
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt (optional)
  • 1 tbsp all-purpose flour
  • 1 tbsp water
  • 2 tsp lemon juice

Tips

  • For a quick hack, use a can of prepared apple filling and add a teaspoon of cinnamon.
  • If you don't have pumpkin pie spice, use 2 teaspoons of ground cinnamon, 1/2 teaspoon ground nutmeg, and 1/4 teaspoon ground clove.
  • The apple filling can be prepared up to 2 days ahead of time.
  • You can cut the pastry into 6 pieces for less pastry, or use two sheets to make 12 croissant muffins (double the filling if using two sheets).
  • If making ahead, reheat in the oven or air fryer to crisp up the pastry.
