Directions

  1. 1In a large bowl, add the flour, baking powder, Cojita, chili powder, paprika, salt, and pepper. Stir to combine.
  2. 2Add the milk and the beaten egg and stir until almost combined.
  3. 3Fold in the corn, jalapeño, and chives.
  4. 4Over medium-high heat, heat the canola oil. Drop in tablespoon size balls of the fritter mixture.
  5. 5Fry the fritters until golden on all sides, then remove from oil and drain on paper towels.
  6. 6In a small bowl, add the mayonnaise, lemon juice, honey, and chipotle chili powder and stir to combine to make the Honey Chipotle Aioli.

Ingredients

  • 3/4 cup flour
  • 1 tsp baking powder
  • 1/3 cup cojita cheese
  • 1/4 tsp chili powder
  • 1/4 tsp paprika
  • salt (optional)
  • pepper (optional)
  • 1/2 cup milk
  • 1 whole egg, beaten
  • 2 ears corn, kernels removed
  • 1 whole jalapeño, seeds removed and diced
  • 2 tbsp chives, chopped
  • for frying canola oil
  • 1 cup mayonnaise
  • 1/2 whole lemon juice
  • 1 tsp honey
  • 1/2 tsp chipotle chili powder
