Creamy Chicken & Wild Rice Soup

Directions

  1. 1Season 1 lb of thinly cut chicken breasts with Kinder's the Blend seasoning (garlic powder, onion powder, salt and pepper).
  2. 2In a large pot, heat 2 tablespoons of oil over medium heat and cook the chicken until thoroughly cooked.
  3. 3Remove and chop it up or shred it and set it aside.
  4. 4Add 1 tbsp of butter to the pan along with 1 diced onion, 3 sliced carrots and 2 sliced stalks of celery.
  5. 5Season with salt and pepper and cook for 10 minutes.
  6. 6Add 5-6 minced garlic cloves.
  7. 7Cook for 1 minute.
  8. 8Add 3 more tablespoons of butter.
  9. 9Stir in 3 tablespoons of flour and let that cook down for 3-4 minutes.
  10. 10Slowly stir in 2 cups of chicken broth and 2 cups of heavy cream.
  11. 11Add 2 boxes of Ben's Original long grain and wild rice and the seasoning packets.
  12. 12Stir well and add the chicken.
  13. 13Bring to a boil, reduce heat to simmer, cover, and cook for 20-25 minutes, stirring occasionally, until rice is fully cooked and soup has thickened.

  • 2 boxes Ben's Original long grain and wild rice
  • 2 seasoning packets
