Chicken Gnocchi Soup

Directions

  1. 1Start by cutting all your veggies and set aside.
  2. 2In a bowl, mix your chicken breast with some olive oil, paprika, garlic salt, and pepper.
  3. 3In a pot, sear the chicken breast in some olive oil on medium heat on each side for a couple minutes.
  4. 4Take them out and set them aside.
  5. 5Melt your butter in the pot and add the onion, celery, and carrots.
  6. 6Stir, and cook for 5 minutes, ensuring to get all the flavor leftover from searing the chicken.
  7. 7Add the garlic, Italian seasoning, and thyme.
  8. 8Cook for 5 more minutes, then add the flour and stir.
  9. 9After about two minutes, add the chicken broth and chicken bouillon and stir.
  10. 10Once it comes to a boil, turn to medium low heat, place the chicken back in, cover, and let cook for 15 minutes.
  11. 11Take the chicken back out and shred or chop.
  12. 12While the chicken is out of the pot, add the half-and-half.
  13. 13Once it comes to a gentle boil, add in your gnocchi and boil for 5 minutes, covered.
  14. 14Turn heat off and add your chicken back in and the spinach.
  15. 15Top with some parm!

  • Olive oil
  • 2 chicken breasts
  • 2 tsp paprika
  • 1 tsp garlic salt
  • 1 tsp pepper
  • 4 tbsp butter
  • 2 celery stalks
  • 1 whole carrots
  • 1 small to medium onion
  • 0.5 large onion
  • 4 garlic cloves
  • 2 tsp Italian seasoning
  • 0.5 tsp thyme
  • 2 tbsp flour
  • 4 cups chicken broth
  • 1.5 tsp chicken bouillon
  • 2 cups half and half
  • 16 oz gnocchi
  • handfuls roughly chopped spinach
  • Parm for topping

  • If the soup is too thick for your liking, add a little milk.
