Start by cutting all your veggies and set aside.

In a bowl, mix your chicken breast with some olive oil, paprika, garlic salt, and pepper.

In a pot, sear the chicken breast in some olive oil on medium heat on each side for a couple minutes.

Take them out and set them aside.

Melt your butter in the pot and add the onion, celery, and carrots.

Stir, and cook for 5 minutes, ensuring to get all the flavor leftover from searing the chicken.

Add the garlic, Italian seasoning, and thyme.

Cook for 5 more minutes, then add the flour and stir.

After about two minutes, add the chicken broth and chicken bouillon and stir.

Once it comes to a boil, turn to medium low heat, place the chicken back in, cover, and let cook for 15 minutes.

Take the chicken back out and shred or chop.

While the chicken is out of the pot, add the half-and-half.

Once it comes to a gentle boil, add in your gnocchi and boil for 5 minutes, covered.

Turn heat off and add your chicken back in and the spinach.

Top with some parm!

2 celery stalks
1 whole carrots
1 small to medium onion
0.5 large onion
4 garlic cloves
2 tsp Italian seasoning
0.5 tsp thyme
2 tbsp flour
4 cups chicken broth
1.5 tsp chicken bouillon
2 cups half and half
16 oz gnocchi
handfuls roughly chopped spinach
