In a large deep skillet or pot, heat olive oil over medium heat.

Add ground beef and onion. Cook until beef is browned and onion is soft, about 6–7 minutes.

Drain excess fat.

Stir in garlic, salt, pepper, and Italian seasoning. Cook for another 1 minute until fragrant.

Add beef broth, milk or cream, corn, and uncooked noodles. Stir to combine and bring to a gentle boil.

Reduce heat to medium-low, cover, and simmer for 10–12 minutes, stirring occasionally, until noodles are tender and most of the liquid is absorbed.

Stir in Parmesan and mozzarella (if using) until melted and creamy.

Let sit for a few minutes to thicken, then garnish and serve hot.

2 cups beef broth
1 cup milk or heavy cream
1.5 cups frozen or canned corn (drained)
8 oz egg noodles or rotini
0.75 cup grated Parmesan cheese
0.5 cup shredded mozzarella (optional for extra creaminess)
Fresh parsley or green onions (optional, for garnish)
