One-Pot Creamy Garlic Beef & Corn Noodles

Directions

  1. 1In a large deep skillet or pot, heat olive oil over medium heat.
  2. 2Add ground beef and onion. Cook until beef is browned and onion is soft, about 6–7 minutes.
  3. 3Drain excess fat.
  4. 4Stir in garlic, salt, pepper, and Italian seasoning. Cook for another 1 minute until fragrant.
  5. 5Add beef broth, milk or cream, corn, and uncooked noodles. Stir to combine and bring to a gentle boil.
  6. 6Reduce heat to medium-low, cover, and simmer for 10–12 minutes, stirring occasionally, until noodles are tender and most of the liquid is absorbed.
  7. 7Stir in Parmesan and mozzarella (if using) until melted and creamy.
  8. 8Let sit for a few minutes to thicken, then garnish and serve hot.
