Directions

  1. 1Add 4 or 5 chopped garlic cloves to a hot oiled pan.
  2. 2Cook the garlic for about a minute.
  3. 3Add 2 tablespoons of tomato paste.
  4. 4Cook the tomato paste for a minute or two.
  5. 5Pour a can of whole peeled tomatoes into a bowl.
  6. 6Use clean hands to break the tomatoes up into bite-sized pieces.
  7. 7Add the broken tomatoes to the pan.
  8. 8Add about a teaspoon of salt, maybe a half a teaspoon of dried oregano, and a pinch of red pepper flakes.
  9. 9Stir the mixture and bring it to a simmer.
  10. 10Let it simmer for about 10 minutes, stirring occasionally, until it thickens slightly.
  11. 11Taste the sauce to adjust seasoning.
  12. 12Add two cans of rinsed and drained cannellini beans to the pan.
  13. 13Stir the beans to combine.
  14. 14Let this cook for a few minutes to bring everything up to temp.
  15. 15Turn off the heat.
  16. 16Cover the entire dish with fresh grated mozzarella.
  17. 17Sprinkle about a quarter cup of grated Parmesan on top.
  18. 18Throw the whole thing under a broiler for a few minutes to get the cheese bubbling.
  19. 19Let the pizza beans cool off for a minute before eating.
  20. 20Garnish with fresh chopped basil if desired.
  21. 21Serve in a pasta bowl.
