Directions

  1. 1Add diced potatoes, olive oil, salt, Italian herbs seasoning, onion powder, garlic powder, chilli powder, and smoked paprika to a bowl.
  2. 2Mix the ingredients thoroughly.
  3. 3Air fry at 200°C/400°F for 20-25 minutes, flipping halfway, or oven bake at 200°C/400°F for 30-35 minutes, flipping halfway.
  4. 4Cook diced onions in a pan until they have some color.
  5. 5Add extra lean beef mince to the pan with the onions.
  6. 6Pour in Worcestershire sauce and add the same seasonings used for the potatoes.
  7. 7Once the mince is nearly cooked, add tomato paste and diced garlic.
  8. 8Mix and cook the mince mixture fully.
  9. 9In a bowl, add eggs and blended cottage cheese.
  10. 10Mix the egg and cottage cheese mixture.
  11. 11Cook the egg mixture on low-medium heat, mixing gently every minute or so until super fluffy.
  12. 12Season the cooked eggs with salt and pepper.
  13. 13Grab a warm tortilla.
  14. 14Evenly distribute the cooked eggs, mince, and potatoes on the tortilla.
  15. 15Top with Sriracha mayonnaise and chives.
  16. 16Roll the burrito.
  17. 17Toast the rolled burrito.
  18. 18Repeat the process for the remaining nine burritos.

Tips

  • To avoid tortillas from breaking, heat them on a pan on low heat for 30 seconds on each side before rolling.
  • To eat a frozen burrito: remove from wrapper/foil, wrap in slightly damp paper towel, microwave for 2 minutes, then air fry at 190C/375F for 5-8 minutes (can also use oven or pan).
