Spicy Peanut Sauce Noodles

Directions

  1. 1Dice 20 ounces of thin-sliced chicken breast.
  2. 2Quickly throw together a marinade for the chicken using soy sauce, sriracha, lime juice, salt, garlic powder, and onion powder.
  3. 3Toss the marinated chicken in a pan over high heat.
  4. 4Once the chicken is 80% done, toss in the whites of green onions and minced garlic.
  5. 5Cook for another 3 to 4 minutes.
  6. 6Using the same pan, add creamy peanut butter, soy sauce, sriracha, honey, and lime juice for the peanut sauce.
  7. 7Keep the heat extra low, just high enough to make everything melt and come together.
  8. 8Start cooking your noodles or pasta of choice.
  9. 9Grab half a cup of the starchy water from the noodles and add it to the peanut sauce.
  10. 10Toss in your cooked noodles.
  11. 11Add the cooked chicken and green onions (reserved for garnish).
  12. 12Mix everything together and enjoy.

  • 0.5 juice of lime
  • salt

  • 10 cloves minced garlic
  • 5 green onions (whites only, reserve greens for garnish)
  • 100 gram creamy peanut butter
  • 40 gram soy sauce
  • 20 gram sriracha
  • 75 gram honey
  • 1 juice of lime
  • 300 gram noodles or pasta of choice
  • 0.5 cup starch water from noodles

Tips

  • The easiest method to split servings accurately is to weigh the noodles mixed with sauce, divide by 5, then portion to 5 containers. Separately weigh the chicken + green onion/garlic mixture after cooking, divide by 5, and place on top of noodles (instead of mixing the chicken in the pan with all the noodles).
  • Keep the heat extra low when making the peanut sauce, just high enough to melt and combine everything.
