Directions

  1. 1Brown the ground beef in a pot, season with salt and pepper. Mash it using a meat masher and cook until browned.
  2. 2Finely chop the onion, carrot, and celery.
  3. 3In the same pot add olive oil, and then add the chopped vegetables, salt and pepper and sauté.
  4. 4Add thyme, rosemary, and garlic.
  5. 5Add bay leaves and cinnamon stick.
  6. 6Add paprika and stir.
  7. 7Add tomato paste and mix.
  8. 8Add red wine and let it reduce.
  9. 9Add the cooked ground beef and stir.
  10. 10Add beef broth and simmer for approximately 15-20 minutes.
  11. 11While the meat is cooking, prepare the mashed potatoes: boil the potatoes until tender.
  12. 12Once cooked, mash them with cream, thyme, butter, salt and pepper.
  13. 13Add the egg yolks and mix well.
  14. 14Remove the bay leaves and cinnamon stick from the meat sauce. Add the peas.
  15. 15Spread half of the mashed potatoes in a baking dish.
  16. 16Add the meat and vegetable mixture on top of the mashed potatoes. Spread the rest of the mashed potatoes over the meat mixture.
  17. 17Sprinkle parmesan cheese, and bake at 250°C until golden brown.
  18. 18Garnish with chopped chives.

  • 50 g butter
  • 1 pinch pepper
  • 1 pinch salt
  • 3 egg yolks
  • 50 g parmesan cheese
  • 1 handful chives
