Directions

  1. 1Season 2 pounds of ground beef with salt and pepper.
  2. 2Drain some of the fat from the ground beef.
  3. 3Add some onion, a carrot, and a celery stick to the ground beef.
  4. 4Add three freshly minced garlic cloves and a tablespoon of tomato paste.
  5. 5Add a branch of rosemary and thyme.
  6. 6Deglaze with some red wine.
  7. 7Add enough beef broth to cover all the beef.
  8. 8Simmer until the broth has reduced.
  9. 9Add some peas and check if it needs more salt.
  10. 10Peel some potatoes and cut them into smaller pieces.
  11. 11Boil the potatoes until completely soft.
  12. 12Mash the potatoes with a couple knobs of butter and some shredded cheese.
  13. 13Pour in about a half cup of hot heavy cream, three egg yolks, and some Parmesan cheese.
  14. 14Add a fat pinch of salt and some black pepper to the mashed potatoes.
  15. 15Transfer the meat mixture to an oven-safe dish.
  16. 16Score some lines on the meat with a fork.
  17. 17Top with freshly shredded parmesan and a little bit of black pepper.
  18. 18Bake in the oven at 400 degrees Fahrenheit until the top is nice and golden brown.

Tips
