Ingredients
shrimp
2 cups all-purpose flour
4 tbsp cornstarch
1 tsp baking soda
1 tsp baking powder
1 tsp salt
2 cups club soda
1 tsp pepper
oil
Equipment
bowl
spatula
wire rack
Tips
Do not put extra flour on the shrimp or dredge them first, as this can make them gummy.
The batter will seem a little thin, but it will thicken up while the oil heats.
The batter works great on chicken, zucchini, and onions too.
