Porkbelly covered in cowboy candy

Directions

  1. 1Trim the fat on the side of the pork belly.
  2. 2Add roasted garlic olive oil as the binder.
  3. 3Add salt.
  4. 4Add cuso's maple bourbon.
  5. 5Place the pork belly with fat side down on the smoker for 225 degrees.
  6. 6Flip it.
  7. 7Cut the jalapenos into slices.
  8. 8Put the jalapenos on the wire rack and smoke them.
  9. 9Add butter to the pan.
  10. 10Add water.
  11. 11Add brown and white sugar.
  12. 12Add hot honey.
  13. 13Add cuso's hot honey and spicy garlic buffalo.
  14. 14Mix them all together and let it cook down.
  15. 15Add the jalapenos to the mix.
  16. 16Cut the pork belly into smaller strips.
  17. 17Lay down a layer of cowboy candy on the bottom of an aluminum foil tray.
  18. 18Spread out the jalapenos.
  19. 19Lay down the pork belly.
  20. 20Add another layer of cowboy candy on top and braise it for one hour.

  • 1 cuso's maple bourbon
  • 1 bowl jalape os
  • 1 stick butter
  • 1 water
  • 1 brown sugar
  • 1 white sugar
  • 1 cuso's hot honey
  • 1 cuso's spicy garlic buffalo
