Honey-Garlic Butter Zucchini

Directions

  1. 1Slice the zucchini lengthwise and score the tops, then place on a plate and salt the tops generously.
  2. 2Let them sit for 10 minutes.
  3. 3Add the butter, olive oil, honey, salt, parsley, garlic and pepper to a small bowl.
  4. 4Mix together to form a paste. Set aside.
  5. 5Use a paper towel to remove the moisture from the tops of the zucchini.
  6. 6Heat a cast iron pan or heavy skillet over medium-high heat. Add some olive oil and place the zucchini face down.
  7. 7Place a heavy pan on top to press the zucchini down.
  8. 8Sear for 2 minutes, until the tops are browned.
  9. 9Flip the zucchini over and place in the oven for 10 minutes.
  10. 10Remove the zucchini from the oven, then place a spoonful of the butter over each zucchini and spread over the tops.
  11. 11Place them back in the oven for 10-12 more minutes, until tender.
  12. 12If you would like the tops more brown, place under the broiler for 1-2 minutes.
  13. 13Plate the zucchini then top with the arugula, pine nuts and goat cheese.

  • Olive oil
  • 3 tbsp unsalted butter, softened
  • 1 tbsp olive oil
  • 1 tbsp honey
  • 0.5 tsp salt
  • 2 tbsp parsley
  • 3 cloves minced garlic
  • to taste Pepper
  • 0.25 cup chopped arugula
  • 3 tbsp crumbled goat cheese
  • 2 tbsp toasted pine nuts
