Directions

  1. 1Slice the pork into thin slices.
  2. 2Season the pork slices with cooking wine, salt, and white pepper, and let it marinate for 10 minutes.
  3. 3Mix 100g of potato starch with 250g of water in a bowl.
  4. 4Let the potato starch and water mixture sit for 5 to 10 minutes until the starch has separated from the water.
  5. 5Mix the sweet and sour sauce by combining 50g sugar, 50g rice vinegar, 3g soy sauce, 1g salt, 2g starch water, and 10g water.
  6. 6Pour off the water from the potato starch mixture on top, leaving only the solid starch at the bottom of the bowl.
  7. 7Coat the marinated pork slices evenly in the potato starch paste.
  8. 8Heat oil in a wok until it's ready for frying (when you see a little ripple/tail when putting a chopstick in).
  9. 9Fry the pork slices individually, ensuring they don't stick together, until they reach a lightly golden color.
  10. 10Remove the first batch of fried pork from the oil.
  11. 11Crank up the heat to about 355°F (179°C) and fry the pork again for approximately 30 seconds until golden brown and crispy.
  12. 12Leave a little oil in the pot and pour in the sweet and sour sauce.
  13. 13Simmer the sauce on low heat until it bubbles and thickens slightly.
  14. 14Toss in the crispy pork along with some shredded carrot and scallion.
  15. 15Stir everything super quickly to coat the pork evenly in the shining, sticky glaze.
