Dice roma tomatoes, add onion, jalapeños, cilantro, lime juice, and a big pinch of salt to a bowl, then stir to make the pico de gallo.

Open avocados and put them in a bowl.

Add onions, tomatoes, jalapeños, cilantro, and lime juice to the avocados in the bowl.

Mash the avocado mixture with a potato masher until well combined.

Season the guacamole with a big pinch of salt and stir.

In a blender, combine chipotles, adobo sauce, one container of Mexican crema, cilantro, and the juice of half a lime.

Blend the crema mixture until smooth and pour into a squirt bottle.

Heat a little oil in a big pot and soften diced onion.

Add ground beef to the pot and break it up using a tool.

Season the ground beef with salt, black pepper, cumin, paprika, and oregano.

Stir in a can of diced green chilies and let the mixture simmer for about 15 minutes.

Place a tortilla on the grill and load it with cheese.

Put a layer of the ground beef mixture on top of the cheese.

Add a layer of guacamole.

Add a layer of pico de gallo.

Fold the tortilla in half.

Flip the quesadilla back and forth on the grill until it's crispy and the cheese is melted.

Cut the quesadilla in half and serve with chips and Baja sauce.
