Amarillo Beef Quesadillas with Guacamole, Pico De Gallo and creamy Baja Sauce

Directions
- 1Dice roma tomatoes, add onion, jalapeños, cilantro, lime juice, and a big pinch of salt to a bowl, then stir to make the pico de gallo.
- 2Open avocados and put them in a bowl.
- 3Add onions, tomatoes, jalapeños, cilantro, and lime juice to the avocados in the bowl.
- 4Mash the avocado mixture with a potato masher until well combined.
- 5Season the guacamole with a big pinch of salt and stir.
- 6In a blender, combine chipotles, adobo sauce, one container of Mexican crema, cilantro, and the juice of half a lime.
- 7Blend the crema mixture until smooth and pour into a squirt bottle.
- 8Heat a little oil in a big pot and soften diced onion.
- 9Add ground beef to the pot and break it up using a tool.
- 10Season the ground beef with salt, black pepper, cumin, paprika, and oregano.
- 11Stir in a can of diced green chilies and let the mixture simmer for about 15 minutes.
- 12Place a tortilla on the grill and load it with cheese.
- 13Put a layer of the ground beef mixture on top of the cheese.
- 14Add a layer of guacamole.
- 15Add a layer of pico de gallo.
- 16Fold the tortilla in half.
- 17Flip the quesadilla back and forth on the grill until it's crispy and the cheese is melted.
- 18Cut the quesadilla in half and serve with chips and Baja sauce.
