Peel and grate the carrots.

Heat butter in a skillet over medium-high heat. Add carrots and salt; cook for 1 minute.

Add brown sugar and cook until dissolved, about 1 minute more.

Remove from heat and drain on paper towels.

Combine cream cheese, vanilla, confectioners' sugar, cinnamon, ginger, and nutmeg in a large bowl.

Beat with an electric mixer until smooth and fluffy.

Fold in the cooked carrots, pineapple, and walnuts.

Cover and refrigerate for 1 hour.

Serve with pretzels, graham crackers, and sliced apples.
